After training at the acclaimed Sushi Aozora, Chef Mitsui opened his own
restaurant in spring 2025, showcasing a unique culinary style. The omakase course features 5–6 seasonal small dishes and 12–13 pieces of expertly crafted nigiri. Charcoal-grilled “yaki-zushi” adds a fragrant twist, and the rice is
cooked in a traditional hagama pot for a crisp, clean finish. Pairings of sake, awamori, and wine are thoughtfully selected by the proprietress to elevate each dish. The interior, designed by Akira Sugihara of Sugihara Design Office in
Kyoto, is a must-see—sophisticated yet warm.
