These days, when new hip and hot places open almost every week, it is way too easy to forget the old classics. Wedholms Fisk, founded by the late and great Bengt Wedholm is a prime example of this. One of Stockholms best (there are actually surprisingly few of them) pure seafood restaurant is open for lunch and dinner and seldom disappoints if the “the real thing” is what you are looking for – a bit like Le Duc in Paris. The menu is strong on classics from Swedish oysters to sole meunier or Turbot with horseradish, browned butter and new potatoes. The Swedish seafood is superb, but a lot of it should be preordered few days in advance to quarantee the quality.

Fried Baltich herring with mashed potatoes is the classic, I prefer the knäckebröd rye crisp bread with pickled fried Baltic fish, cucumber, onions and herb mayonnaise. Addictive!

Borasco is the wind that comes with flash and thunder after a storm, common in the Mediterranean where the kitchen’s heart lies.Lukas Moderato is a very talented chef with a great track record of running his own iconic places; my favourite being Deville, but also Carousel next to the Opera and Dining Club (all closed now).The food is full on flavor. It’s not complicated, there’s not too much of crazy spices but it’s balanced to the bone. Fire cooking is a red thread: of course a lot of meat, but also grilled sardines or petite artichokes that have just been touched by the flames. Don’t miss: the tomatoes with anchoas, such a simple thing but the burnt butter on top does it all. The bread served with chicken fat butter, oh my! The mentioned artichokes, of course. And grab either the Mangalitsa pork or piece of meat — or both.Wines are at the point too. Mainly Europe, a good mix och natural and more classic stuff. The vibe is casual. You can swing by for just a glass of wine and a dish but stay for a full dinner.
