One of the experiences we had that really stood out in Kyoto is at a place called KOKE. It's a one Michelin star restaurant and it absolutely blew me away. I can't even put a finger on it, I'm reliving it in my mind. We had eel and fish from all different regions, the chef is right in front of you cooking everything. It was so beautiful and so artistic and the flavors we're so unique. A lot of times when you get a Japanese kaiseki you see a lot of repetition, but this was a truly unique kaiseki. I had never had anything like it before and it really blew me away. I would 100% go back there.
