Fontana is a new favourite of mine and it’s amazing. It is run by Daniel Johnston, Harry Levy and Ivey Wawn. They're old restaurant hands, they've worked all around the world. I love their restaurants because it just feels like a lot of love, every dish is so well executed. There's this theme in Australia, people want to say it's modern Australian which is a bit weird to me, because we're an amalgam of so many different cultures. It’s really interesting when you've got these people who are clearly not Italian or clearly not Japanese, but they're cooking really amazing influence food from those countries. Dan Johnston is one of those chefs – he is so white, but his Mediterranean food is excellent, and I think it's because they source their ingredients really well. The execution is just faultless.
