The massive open hearth just reeks of caveman cooking, and the kitchen - under the ultimate direction of the Alinea Group’s Grant Achatz - is disciplined like a military brigade. They’ve only had a handful of Chef de Cuisines here over the years, and each one seemingly has their own style. This is far from stuffy food, in fact, best to bring a few friends so you can all try each other’s dishes. Sit at the long counter though for a bird’s eye view of the real action, where proteins are grilled, roasted and smoked over open flame. If they still have the fried chicken on the menu, be sure to try it.
