The knife skills are phenomenal just as the no frills nigiri made with only the simplest yet finest ingredients. After the grilled sardine and deep fried ayu sweet fish we had the most delicate onion broth. Then on display were toro, sea eel, uni, various clams, beautiful horse mackerel perhaps the star, the even better lightly charred bonito, sweet ebi, and kohada.
