Bones Bagels is my current favorite bagel spot in The City. It comes c/o long time bread baker and San Diegan turned San Franciscan Noah Orloff. I love that each one is different and imperfect, formed with deft hands not mindless machines. I love the craggily corn meal crust bottoms with its crunchy cracks and crevices. I love the deep open crumb center with craters creating little pools of butter as their existence slowly melts away. Naturally leavened, the prominent sour tang lets you know you’re in San Francisco—You can taste the fog.
Everything is organic, from the rye and wheat flours to the cream cheese, and it’s located at the bottom floor of a tall old residential building at the edge of Noe Valley. It’s really a special spot.
