Ariete is in the Coconut Grove area of Miami. It has been fascinating to see Chef Michael Beltran take what was a somewhat simple neighborhood spot and evolve it into one of the most intelligent and artistic restaurants in the region. Every season a new program is started, (the duck press a few years ago), the deepening wine list, the lovingly rendered desserts. What has been core is the fusion showing his beloved Cuban roots alloyed with classical cooking that spans epochs.
