Walked into Revolver Dubai expecting modern Indian — walked out blown away by something far more bold.
Chef Jitin Joshi (of 2-Michelin-starred Gymkhana London) calls it “open fire cooking with South Asian influences.” Expect Indian, Thai, Indonesian — even Gruyère cheese in a butter chicken kulcha (and yes, it works).
