Luciano Monosilio is known to many as the king of Carbonara. In this restaurant, which he opened in the city centre after a long experience in haute cuisine, he pays homage first of all to Roman cuisine, in the traditional first courses: carbonara, amatriciana and cacio e pepe. The pasta itself, such as mezze maniche and fettuccine, is homemade. The menu is completed by contemporary osteria-style dishes that exalt local and Italian excellence. Not to be missed is the Tiramisù, a mouth-watering and even crunchy version of the iconic dessert, also featuring dark chocolate.
