High Five

Tokyo remains probably my favourite city to visit in the world, with incredible restaurants and and bar scene going on that I think now has a new wave. Whenever I go back to Bar High Five, it remains as the bar that I must see. There's some great places in Tokyo to seek out, from traditional all the way through to some more modern ones, but I think Bar High Five hits the right balance of both of those sides. It's got all of the beautiful attention to detail Japanese bartending that comes from bartender Hidetsugu Ueno that trained under Hisashi Kishi at Star Bar and has that excellence. He has travelled the world, he's lived in the US, he's got elements of this kind of worldly perspective that get married into that Japanese technique that I think just makes this place very, very special.
