In Lima you’ll have to have Pollo a la brasa - the wood fire roasted whole chicken. I either go to one of the La Granja Azul restaurants, which was the pioneer, or I’ll go to my own rotisserie chicken place. People will judge not only the chicken and the fries, but also very important are the amount of different sauces you have and that they are homemade.
