Today, one of the most famous places to try pad Thai is Thipsamai, an 80-plus-year-old establishment singer Ed Sheeran visited this year. The restaurant’s interpretation has an orange hue that I rarely see in pad Thais at U.S. restaurants. That comes from the generous use of tamarind and its sweet, sour notes.
