The owner is Mikkel Maarbjerg who entered the Copenhagen dining scene many years ago and quickly got two Michelin stars. However he has spent the last 10 years or more away from the public eye but still in the food industry.
With Vie he is back and already making his mark again on Copenhagen. He calls it a “city inn” which I guess is another word for relaxed setting, simple dishes and fresh ingredients.
A lot of you will know that I have lost my heart to both San Sebastian and Japan. Both share a love for products and keeping it simple. So does Vie. The food is simple. Simple in this context is a very positive thing. The food is the result of a chef who is confident enough to take away unnecessary decorative elements, a chef that doesn’t need to show off with neither technique nor fancy and expensive ingredients. No this is a chef that wants to cook delicious food and that is exactly what he does and he does it very well.
Going through the menu its obvious that he is has a heart filled with vegetables so I can’t wait to be back in early summer when Denmark is blooming with fresh amazing vegetables and fruits.
