Essence is a very personal venue where a passionate Scotsman named Stefan Taylor weaves a story-driven dining experience, blending globally inspired ingredients and personally overseeing every detail from cooking to serving.
Chef Taylor's menu is rooted in memories of places he’s visited, each dish reflecting a story or a connection. The ingredients are carefully selected, often linked to his own history - whether it’s produce from a trusted supplier, wine from his friends, or something more sentimental, like herbs from a specific region that holds meaning for him.
Many of the dishes strike a good balance of technical precision and comforting warmth. Modern and playful, often with a nod to classic flavor combinations. The play on textures is particularly interesting, with crunchy elements serving as a pivotal component in most of the servings.
