The meat – which they cure and smoke themselves – is smooth and tender, the delicately charred flavour given a boost by a lick of smoked mayo and the sweet-salt of miso caramel. A recent desert of whipped white chocolate, caramelised in bone marrow - “Marrowmel” - uses bone marrow instead of butter, and was a delightful surprise to conclude an exciting and accomplished meal.
