They cook as if they were at home but in a professional environment. The trippa alla Romana dish is really trippa alla Romana. And polpette is really polpette. They do small batches, not a huge production. It's mainly one person, sometimes two cooking and everything is prepared according to tradition. The chef patron, Alessandra Ruggeri, does a very good job in choosing the prime ingredients. Everything from the food to wine is from the Lazio area. I go to Osteria Della Trippa whenever I can.
