Santiago Lastra
Chef
Santiago Lastra is a Mexican chef and co-owner of Michelin-starred KOL and KOL Mezcaleria in London. He entered the restaurant world at fifteen and left Mexico to travel the world and learn from other chefs. A defining moment for his career was the launching of the Noma Mexico pop-up in his home country in 2017 that led him to reconnect with his roots and gave him the inspiration to open his first restaurant.
